You might like to add South Africa's Wild Coast to your list of hiking trails; it has roads extending to the shore, but not along it due to the low population and difficult terrain. Locals are more and more organizing "slack packing" trails -- you can sleep indoors, eat great food and let some one else carry your pack -- along the coast. Mostly the trails are rather short, but I wonder if it might not be possible to hike one after another and do the whole coast. A good book is Fiona McIntosh's Slackpacking A Guide to South Africa's Top Leisure Trails.
