		<description>Recently reconverted to vegetarianism (had been veggie from the age of 14 until I was 32, then took a 10 month experiment in meat eating while I recovered from a crash), and ultimately realized I just don&#039;t like the heavy flavors or texture of meat all that much.  Since re-converting about 6 weeks ago, the stubborn fat bits are melting away and my runs are pain-free.  Speed is also coming back swiftly.  

So I do find it helps my athletic performance.  The only downside: right now (height of my age group racing season) my training volume is so high that I have to eat ALL THE TIME!</description>

I like that there is variety and diversity in the countries represented, but there are many dishes and ethnic cuisines not included. I love cooking for people and have them not realize that the cuisine is completely vegetarian.  Not because I am trying to fool them, but because food is delicious without meat.</description>

		<description>Cuban black beans and rice is one of my favorite foods.You could also make it with red beans. I was born in Cuba and this was the first solid food that I ate as a baby.  Carmen,my nanny, mashed it through a sieve so that I could eat it.
I soak the black beans overnight and then the next day cook it with lots of chopped onions, garlic,and green peppers that have been sauteed in olive oil. I thicken it using a tomato paste. I serve it over brown/white rice.</description>
