What about altering/breeding living flightless avians to look more ‘dinosaur–ish’? That's a project I could actually see someone attempting.

"There are plenty of living dinosaurs that could use a hand through conservation programs, so perhaps it would be better to try to save some avian dinosaurs rather than bring their non-avian cousins back from the dead."

This. The same goes for cloning extinct animals in general.

This is an excellent point - here in New Zealand as well, there is no shortage of endangered species of birds, several of which are flightless: the well known Kiwis to the more obscure Kakapos and Takahes.

I've gone eye-to-eye with a Cassowary at the Bronx Zoo. Seeing one is just incredible. And looking one in the eye gives you the impression that it is full of hate and dreams of vengeance. Beware the Cassowary, and all ratites!
