		<description>I like to combine diced tomatoes, cucumbers, and sometimes onion, with a prepared dressing (Italian, Greek, etc.) and sometimes herbs.  I like it with Raspberry Walnut Vinaigerette with Herbs de Provence blend. Cheese would make a good addition, but we usually keep it Lenten, and thus cheese-less.</description>

Skin four-five tomatoes and blend them in a blender. Pour into a large pot, add one chopped onion and a minced clove of garlic (maybe two); and, two-three cans of tomato paste (and add three cans of water for every can). Add dried basil, oregano, and a little garlic salt. Heat until it boils, then lower heat and let it cook for 30-45 minutes, or so. Reduce heat to low, allow sauce to thicken. And, never add sugar.</description>
