		<description>We always had potato leek soup on Christmas Eve. That was the only time of the year we ever had leeks until we lived in Scotland. They are eaten there year round! A friend recommended wrapping the leeks in bacon and pouring over a bechamel cheese sauce before baking (YUM!); I also made a leek &quot;crumble&quot; several times which was fantastic (leek/cream base with a butter/oat/flour topping). I like to make my potato leek soup with a bit of white wine added.</description>

		<description>Leeks are delicious in a quick pasta dish. I fry the leeks in some oil, add some cream and let it heat up to boiling point. Then I mix the sauce with cooked pasta, smoked salmon, lots of black pepper and some fresh, diced tomatoes. Simple and delicious!</description>
