Being Australian I never ate "PB&J" sandwiches as a kid, but my brother "discovered" peanut butter and honey sandwiches in the 70s. Warmly recommended, banishes our teenage munchies brilliantly. Works best on toast or white bread.
Randy's peanut butter and tomato concept is very good on pumpernickel or any other heavy "vollkorn" bread.
Whether or not fried peanut butter and banana can be described as healthy kids' food, I'll certainly be trying it out on the weekend :)
btw what "jelly" (or jam) is best for PB&J?

I'm probably not the only one to have come up with this, but in college I "invented" a peanut butter & tomato sandwich that I still enjoy on a regular basis. I think of it as a "PLT" although lettuce is really not required. I use a little mayo on bread (or toast) with a generous layer of natural peanut butter and as thick a slice of ripe tomato as I can get.
