		<description>The writer mis-reported what I said. Clearly, if one looks at the Democracy Now transcript, I was referring to McDonald&#039;s Bacon. While speaking I was holding a McGriddle sandwich and said, &quot;McDonald’s pumps this with all sorts of umami.&quot; Regular bacon probably does have some umami, but nothing like McDonald&#039;s bacon. What people find appealing in regular bacon is the fat, smoky aroma and nitrates.

In my original articles on the subject, I argued that the real reason for the bacon-mania explosion has to do largely with the intersection of taste and economics. Simply put, factory farming churns out huge amounts of cheap but tasteless foods. Bacon (and cheese) becomes a quick fix for the processed- and fast-food industry. Essentially, pile on bacon and cheese to almost anything -- potatoes, salads, soups, meats and now even desserts -- and you add a riot of flavors and aromas for just a few pennies more but you can charge a couple of dollars more.

There are also important cultural trends like the locavore movement and bacon as a signifier of masculinity and rejection of &quot;feminine&quot; diet and healthy eating, but the restaurant industry slogan says it all: &quot;When in doubt add bacon and cheese.&quot;
