I hear the same thing all the time. There is a difference of bagels in the north, than from the south( Myrtle Beach, SC). I am a transplant of 11 years, and all my friends are recent transplants as well from Connecticut, NYC( Brooklyn), New Jersey. There is talk among our small congregation about the water, for bagels. I hear the same talk about the Pizza dough. Nice article. I MISS THE BAGELS from NEW YORK, and NJ. Send some down our way will ya. ....

I don't think it is just the water. Even bagels from NYC suburbs, like NJ and CT, with different water supplies, have better taste and texture than so-called bagels in NC or AZ.
