		<description>Don&#039;t forget &#039;rice&#039; it!  Cut in chunks and put in food processor and pulse until rice-sized but not mushy.  Simmer a few minutes in chicken stock until crunchy-tender and drain for a rice substitute.  Also mashed ... this goes over well with vegetable phobic kiddos:  Steam until tender, then mash with butter as with potatoes.  I swear my granddaughter gobbles this down!</description>
